Mashed butter beans

Butter beans are a tasty source of dietary fiber and full of protein.

  • Preparation Time: 15 minutes
  • Serves: 4


  • 2 tbsp olive oil
  • 400g (1 tin) butter beans, drained and rinsed
  • 2 tbsp lemon juice
  • 1 tsp grated lemon peel
  • 1 clove garlic, crushed


  1. Heat oil in a pan.
  2. Add butter beans, lemon juice, lemon peel and garlic.
  3. Stir until heated through.
  4. Mash beans in pan.
  5. Serve with vegetables/salad.
